A new study indicated that baked and roasted potatoes may help people with type 2 diabetes decrease their waist sizes and control their blood glucose levels.
Over 4,000 varieties of potatoes are available globally. They are nutrient-rich, which enhances weight reduction and control blood sugar levels when appropriately cooked.
The study included 24 participants with type 2 diabetes who consumed a 100-gram serving of baked potato (containing 20 grams of carbohydrates) daily for 12 weeks. Half of the participants avoided frying their potatoes, while the other half were given an equivalent amount of white rice.
Results showed that those eating baked potatoes had a modest reduction in fasting blood glucose levels, waist circumference, resting heart rate, and improved body composition compared to white rice. Baked or roasted potatoes, rich in potassium, vitamin B6, folate, and dietary fiber, support heart health, digestive function, and weight management.
Experts noted that potatoes are often viewed as unhealthy, which is usually due to how they are prepared. Frying potatoes adds unhealthy trans fats and extra calories, negatively impacting health and heart function. Baking or roasting potatoes is the healthiest preparation method.
